Risk of Rain 2. Runs are ~40 min and it gets gloriously chaotic with two.

Deep Rock Galactic. Not a strict roguelike but missions are short and the co-op is perfect. Rock and stone!

Not a roguelike, but if you haven't played It Takes Two together, do it.
